The perfect companion for the rainy daysHot white chocolate with matcha. Together with a large steaming cup of it, nothing stands in the way of a cozy afternoon on the couch while the rain pelts against the window 😍. 

 

 

Ingredients (for two people)

  •  200g white chocolate 
  •  3 tsp cornstarch 
  • 2 tsp of your favorite matcha (preferably strong in taste)
  • 500 ml milk (cow/oat/soy)
  • Optional: marshmallows

 

Preparation


Mix the matcha with the cornstarch and stir together with a little milk to form a paste. Then add the rest of the milk and stir until all the lumps have dissolved.

Now heat the mixture and melt the chocolate in it. The liquid will thicken over the next few minutes and is then ready.

If you like, you can now add small marshmallows to the cup as a topping. ✨ 😍

Welcher Matcha eignet sich für heiße Schokolade?

Am besten ein kräftiger, geschmacksintensiver Matcha. Die weiße Schokolade ist sehr süß, daher würde ein sehr milder Matcha kaum durchschmecken. Eine fruchtig-intensive Sorte setzt sich klar durch und sorgt für die nötige Balance. Ein günstigerer Culinary- bzw. Alltags-Matcha genügt hier völlig, da der Eigengeschmack ohnehin mit Schokolade kombiniert wird.

Warum darf die Milch nicht kochen?

Matcha reagiert empfindlich auf große Hitze. Ab etwa 80 °C werden vermehrt Bitterstoffe (Catechine) gelöst, wodurch der Matcha unnötig herb schmeckt. Erwärme die Milch daher nur bis kurz vor den Siedepunkt (rund 70–80 °C). Das ist heiß genug, um die weiße Schokolade zu schmelzen, aber schonend für den Matcha-Geschmack.

Geht das Rezept auch vegan bzw. mit Pflanzenmilch?

Ja. Statt Kuhmilch kannst du Hafer- oder Sojamilch verwenden – Barista-Varianten lassen sich besonders fein erhitzen. Für eine vollständig vegane Version nimmst du zusätzlich vegane weiße Schokolade und pflanzliche Marshmallows. Die Maisstärke ist von Natur aus pflanzlich und sorgt weiterhin für die cremige Bindung.

Wie vermeide ich Klümpchen?

Rühre den Matcha zuerst mit der Maisstärke und nur wenig kalter Milch zu einer glatten Paste an, bevor du die restliche Milch ergänzt. So löst sich das feine Pulver vollständig. Wer ganz sichergehen will, siebt den Matcha vorher durch ein feines Sieb – das feine Pulver neigt sonst zur Klumpenbildung.
