Cream puffs with matcha cream is one of those desserts that you didn't know you had to try until you saw it.

Once again, the green in the cream is perfect for creative to get creative and colors into the kitchen and onto the plate. The following are particularly suitable strawberriesbut we can also imagine using blueberries.


Don't be put off by the recipe, because we can promise you one thing: as soon as you have the first bite in your mouth, you'll immediately forget how long you've been working in the kitchen. For sure!



Ingredients


for the choux pastry: 

  • 115 ml water
  • 20 g margarine
  • 1 pinch of salt
  • 70 g wheat flour
  • 10 g starch
  • 2 eggs
  • 1 pinch of baking powder

For the filling: 

  • 70 g strawberries
  • 1 packet of cream stiffener
  • 150 g cold whipped cream
  • 20g powdered sugar
  • 1-2 teaspoons Matcha Basic Line

For the decoration:

  • Powdered sugar + matcha


Preparation

We start with the choux pastry

Bring the water, margarine and salt to the boil in a small pan. Then mix the flour and starch and add to the liquid.

Stir everything into a smooth ball of dough and heat for approx. 1 minute, stirring constantly.
Transfer the dough to a mixing bowl and leave to rest for about 5 minutes.

Now mix two eggs into the batter, one after the other, using an electronic hand mixer on the highest setting until everything is well combined (this can take a while!). When the batter is cold enough, add the baking powder.
Using a pastry bag fitted with a large star-shaped nozzle, pipe 4-6 circles onto a baking tray lined with baking paper and bake at 200°C top/bottom heat for approx. 20 minutes. Do not open the door during baking!
Then cut open the choux pastry while it is still warm.

For the filling Now add the matcha and cream stiffener to the liquid cream, whip it and add powdered sugar in the meantime.
Then drizzle the filling over the bottom part and top with finely chopped strawberries.

Now place the top section on top and sprinkle with powdered sugar and matcha.

After all that work, you really deserve this sweet temptation. Enjoy your meal!
