Matcha Meringues are a crunchy and light snack that goes really well with your daily cup of tea.
They consist only of four ingredientswhich you usually already have at home anyway. This makes them the ideal snack when you have a spontaneous visit or just fancy some matcha meringues😊
The matcha turns the meringues into real eye-catchersthat are a real talking point. In terms of taste, the subtle tartness of the matcha harmonizes with the sweetness of the sugar.

Ingredients (for one tray)
- 2 egg whites (size M)⠀
- 90g sugar
- 1 heaped teaspoon Matcha Basic Line
- lemon juice

Preparation⠀
As the meringues will be two-colored, we prepare the same mixture twice. The first will be light or white and the second will be colored green by adding matcha. ⠀
Put one egg white in each of two bowls. For the light mixture, add a little lemon juice and whisk with an electronic hand mixer. Add 45g of sugar and continue whisking until the mixture is firm and shiny peaks form.
Do the same for the green mixture, adding matcha at the beginning.
Pour both egg white mixtures into a piping bag with a star-shaped nozzle and pipe walnut-sized blobs onto a baking tray lined with baking paper. Leave the meringues to dry for approx. 75 minutes at 110°C top/bottom heat.
