





Ikigai Line N°02 - 30g - Organic | Private Sale
The second matcha in our Ikigai Line - limited to 200 tins.
After the extremely positive feedback on N°01 of the Ikigai Line, we are now all the more pleased to present its successor: The probably "butteriest/creamiest" matcha that we tasted on our last trip to Japan. No bitterness at all. Extremely pronounced umami. This is also the fine Okumidori cultivar (as with N°01 and our Hitotsu).
The tea is the result of an experiment by Mr. Shota Watanabe (渡辺 翔太). The aim was to extend the shading period to the maximum. However, as the plant's metabolism slows down considerably after approx. 30 days (shading period of high-quality matcha), the shading cannot be maximum throughout. For this reason, shading was started earlier than usual, although the plant continued to receive partial sunlight. The Tana method (instead of the simpler Jikagise method) was used for shading. Here, poles are set up to support the nets instead of placing the nets directly on the plants. This puts less strain on the tea plant and allows the air to circulate better.
The result: over 45 days of controlled shading led to an exceptionally high concentration of chlorophyll and amino acids, which ensures maximum umami. Experiment a success!
We are delighted that we were able to secure 200 cans for the German market this time. There will be no replenishment of this matcha.
